Chester Spice Recipe
Chester is a type of large chicken and one of the most popular main course options for Christmas dinner. It emerged as a competitor to the traditional Christmas turkey and appeals to most people, especially for having larger breast and legs than the traditional chicken.

Ingredients for making Chester Spice:
1 onion
4 cloves of garlic
2 chicken broth tablets
½ red pepper
1 glass of dry white wine (250 ml)
3 sprigs of chives
black pepper to taste
salt to taste
How to make spice for chester:
To make the chester marinade, blend all the ingredients in a blender: onion, garlic, broth tablets, seedless peppers, wine, chives and black pepper to taste.
Tip: Leave the salt to season the bird just before roasting, this way you can ensure that the meat is juicy.
Remove chester from packaging, wash and dry lightly. Place the bird in a ziplock plastic bag and add the mixture from the blender. Close the bag tightly, shake to spread the seasoning and refrigerate overnight - the ideal is to leave it for 12 hours, so the meat gets the seasoning well.
Tip: During the time the chester is in the fridge, shake the bag every 2 hours or every 4 hours to spread the seasoning throughout the bird.
After the indicated time, place the chester and marinade in a baking dish and leave it on the counter for 2 hours or until it is at room temperature. Just before baking, don't forget to sprinkle salt.

Tip: If the bag used is a bag suitable for roasting in the oven, you don't need to remove the bird and the marinade inside it.
